Ingredients


Kidney Beans - 1 or 2 cans
Onions
Cilantro
Oil
Brown sugar
Garlic
Pepper
Tomato sauce 1 small  can
Sugar (to brown it)
1 cup of water


//Optionally
Green bell pepper
Carrots
Potato

Main process steps


Brown sugar in oil
Brown Onions
Add tomato sauce
Couple of minutes
Add beans (don't drain)
Add Garlic, Pepper, Salt
Add bell pepper, small cut carrots, potato
Add a cup of water
15 minutes
Mash the beans a little to add to the sauce
Add cilantro
15 minutes

by itself

You know you got it when


it has that rustic wood smoke taste (because of browned sugar)
it is a bit sweet
the sauce absorbed the mashed beans to make it a touch thicker than water

Browning sugar

Not sure where this practice came from. I don't know the level of unhealthy-ness. Here is how it works.

Use an oil that has a higher boiling point than say olive oil. So like a vegetable oil or canola oil.

Heat 4 to 5 table spoons of oil in a pan or a pot or any of your cherished or pampered instruments. Either early or during the heating process add 1 table spoon of sugar (I really don't know the exact amount) to that oil. Continue to heat it until the sugar turns brown to blackish.

Add onions or whatever follows this browning process.

Why do this?

well it gives a woody flavor to what you cook. Especially protein based items such as chicken or beans.
