A fastway to cook Eggplant

Ingredients
Canola Oil
[Indian condiments] if you have it
Onions
Sliced tomatoes
Egg plant
Turmeric
Salt
Plenty of Cayyenne pepper
Cilantro/Parsley

Process
take a pot
3 table spoons of canola oil
Add indian condiments
Saute a big sweet onion
Add tomatoes and saute them as well
Add egg plant
Add a table spoon of olive oil
Add 2 teaspoons of turmeric
Mix
Cover
cook on low heat for 20 minutes
mix every 5 minutes or so
Add salt
Add lots of cayenne pepper

Or better yet, you can skip Tomatoes

A touch of Olive oil
Turmeric
Salt
Plenty of Cayyenne pepper
Cilantro/Parsley (To top it at the end)

Key things
I like the thin kind of egg plant
while you cut them, place them in salt water to avoid darkening
Don't overcook
I recommend not to add garlic unless you know what you are doing!
